    A Low-Fat Easter Treat

    When it comes to Easter, chocolate eggs, candies and cakes are probably the first to come to mind. But if you don't want to overindulge during the upcoming Easter weekend, try to prepare some healthy Easter treats at home!

     

    Start with this handy recipe for chocolate brownies. It takes 90 minutes to prepare and produces 24 servings containing just 60 calories each!

     

    Ingredients

    • 60g all-purpose flour
    • 30g unsweetened cocoa powder
    • 75g white sugar
    • ½ teaspoon of salt
    • 2 tablespoons of vegetable oil
    • 1 teaspoon of vanilla extract
    • 150g prunes, destoned
    • 2 eggs

    You may also add raisins or dried fruits. The natural sugars in these ingredients result in a delicious sweet treat with reduced use of refined sugar. A more fiber-packed ingredient is prunes, which also contain plenty of sorbitol for better bowel regulation.

    Steps

    1. Put the prunes in boiling water and soak for an hour. Preheat the oven to 175˚C.
    1. Dip a brush in vegetable oil or butter and lightly grease a 20cm by 20cm square baking tray.
    1. Puree the prunes in a blender. Mix all dry ingredients in a bowl and add oil, vanilla oil, prunes and eggs while blending the mixture thoroughly with a fork or whisk.
    1. Pour the mixture into a baking tray and bake for 30 minutes.
    1. Remove from the oven and set aside to cool completely. Lift it from the tray and cut into bite size pieces.

    And there you have it — a nutritious, low-calorie Easter treat that tastes as good as the usual offerings!
